  Eggplant and prosciutto rolls

  They can be made a couple days ahead of time and kept in an airtight container in the fridge, serve them on their own cold or at room temperature with some crusty bread and or a salad.

  Peach jam and yoghurt crumble slice

  This country slice makes a great finger food for a picnic, its fresh, light and ideal for lazing around on a rug under the sun. It makes for easy transporting and a sure favourite for the kids. You can interchange the peach conserve for any other flavoured conserves or even use poached fresh fruits.
