Ole to healthy creative and yummy Mexican Food. Lets step away from Texmex food and into the world of fresh and healthy food that you will love! There will be some work with chili and corn and a little cheese – but in small doses.
Mexican cuisine is as complex as other ancient cuisines, such as those of China and Japan, with techniques and skills developed over 9000 thousand years ago.

Welcome Snack – Fresh Fruit and Vegetables with Chamoy (sweet/salt/lime) (V)
Salsa Fresco (tomato based salsa) (V)
Classic Guacamole (V)
Cabbage Salad (V)
Vegetarian Tortilla Soup (made with beans instead of chicken) ( V)
Enchiladas Sencilla – we will make 1/2 Vegetarian using Beans and 1/2 Chicken
Mexican Street Food Tacos – Grilled Fish Tacos OR Mushrooms and Garlic Tacos (V)
Classic Mole poblano made for chicken and sides of Mexican rice and re-fried beans
Fruit dessert – Mango served with Strawberry and Raspberry Sauce (V)
