In this cooking class, you’ll learn to make Taralli wine and olive oil biscuits, crispy ricotta, parmesan and anchovy–filled zucchini flowers, and pane polpette using leftover bread with roast tomato sauce. We’ll cook a Puglian classic, orecchiette with broccoli, explore why fava beans are a pantry staple with fava beans and chicory with caramelised onions, and prepare baked sweet peppers alongside indulgent pork bombette with capocollo and cheese. We’ll finish with Lecce pasticciotti, traditional Italian cream-filled tarts.
