Peach, Lime and Passionfruit Ginger Beer Ice Blocks

Taking advantage of summer peaches and sweet passionfruit, these Peach, Lime, Passionfruit and Ginger Beer ice blocks are a fantastic snack for a hot summers day. Full of fruit, refreshing and with that iconic Ginger beer flavour, big and little ice block lovers will enjoy these. For a twist of the flavour you could also add in some of your favourite Gin or vodka just to spice things up a little more. Ingredients
6 ripe peaches
2 passionfruit, pulp removed
1⁄4 cup mint leaves, finely chopped
2 tbs lime juice
1 tbs icing sugar
1 – ½ cups Buderim ginger beer can be (alcoholic or non-alcoholic)
Recipe Steps
- Dice or slice the peaches and place in a bowl. Add passionfruit pulp, mint and lime juice.
- Sprinkle with icing sugar and stand for 10 minutes. Place about 1/3 cup of the fruit into each ice block mold and fill with Ginger beer. Freeze overnight
