Cajun Lobster Tails

This easy-to-make dish is delicious and beginner-friendly, meaning you don’t have to be a pro in the kitchen to whip it up. I love how it’s simple to prepare and broil.

Serves: 4 people

Ingredients

●        4 lobster tails

●        ¼ cup of melted butter

●        3 cloves of garlic, minced

●        2 tbsp Cajun seasoning

●        Salt and pepper to taste

Recipe Steps

Preheat your oven, grill or bbq to 180c/190c degrees and prepare your lobster tails.

Using a sharp kitchen knife or kitchen scissors, butterfly the tail by cutting it right down the center.

Loosen the lobster meat and pull it upward. This will expose that delicious lobster meat.

Sprinkle some salt and pepper on the lobster and set them on a baking tray. Repeat the process for all tails.

In a container, melt the butter and add the Cajun spice.

Using a brush or spoon, spread this buttery mix over each lobster tail.

Grill, BBQ or bake the tails for about 8 to 10 minutes or until the meat becomes opaque and browns at the top lightly.

Serve hot with the melted butter mix if desired.

Grilled Lobster Tails with lemon herb butter

Ingredients

  • 4 lobster tails
  • 1 cup of softened butter
  • 1 garlic clove, crushed
  • 1 tsp Dijon Mustard
  • Chilli pepper to taste (optional)
  • Salt and pepper to taste
  • A cup of parsley, finely chopped and extra to serve
  • The juice of 1 lemon
  • Lemon wedges to serve

Recipe Steps

Make the lemon herb butter by mixing the softened butter, crushed garlic, parsley, mustard, chili powder, lemon juice, and salt to taste, then set aside. You can make this butter two days in advance and keep it in the fridge. When you are ready to use it, thaw it and let it soften before serving.

Using kitchen scissors, butterfly the lobster shells, then turn the tails over and crack the lobster shell. Using your fingers, gently loosen the meat but keep it attached to the base. Set the tails in a roasting tray and add the butter.

Heat the grill on high and cook the tails for 8-10 minutes until the meat is cooked through. Place the cooked tails on a plate, drizzle the butter from the pan over them, or place it in a small dipping bowl.

Serve with lemon wedges and extra parsley.

Cajun lobster pasta

This wholesome dish is great for dinner and only takes about 30 minutes to make.

Serves: 6 people

Ingredients

  • 3 slices of bacon
  • 500g of lobster meat
  • 1 tsp of Cajun spices
  • 1 red capsicum, diced finely
  • 3 garlic cloves, minced
  • 1 tsp of Old bay seasoning ( see recipe below)
  • 3 shallots / scallions, chopped,
  • ¾ cup of fish broth
  • ½ tsp onion powder
  • ½ tsp of garlic powder
  • ½ tsp oregano
  • ¼ cup of thickened cream
  • Salt and pepper to taste
  • Cooked pasta for serving

Recipe Steps

Put a heavy based  pan over medium heat and cook the bacon. Once ready, remove the bacon from the pan and drain off the fat reserving a tablespoon.  Set it aside.

Next, add in the diced red capsicum and garlic to the pan and cook for 3 minutes on medium heat.

Add the shallots and cook them for a minute, then add the fish broth, chopped-up bacon, Cajun spices, old bay spices, garlic powder, onion powder, oregano, salt, and pepper to taste.

Let the broth boil, then lower the heat to low. Add in your lobster meat, letting it cook for 5 to 6 minutes or until opaque.

Lastly, pour in the heavy cream, stir and let it cook for 3 minutes.

Serve hot over freshly cooked pasta and a sprinkle of green onions.

Alternatively, you can toss the pasta in the lobster sauce and serve.

Old Bay Seasoning

1/8 tsp black pepper

1/8 tsp ground dry mustard

1 pinch each of ground all spice, mace, cardamom, cinnamon, cloves and ginger

Combine all the ingredients in a small bowl and store in an airtight container. Ideal with seafood, crab cakes, bbq prawns – basically it goes with everything and anything.

Lobster salad

This recipe puts a twist on your basic salad recipe. Lightly dressed with mayo and a big helping of lemon juice, this salad is out of this world.

Ingredients

●        ¼ cup of mayonnaise

●        2 tbsp of lemon juice

●        1 celery stalk, finely chopped

●        2 tbsp. of chives, finely chopped

●        Salt to taste

●        The meat from 3 lobster tails, about 350g

●        Lettuce, sliced avocado, and lemon wedges for serving

Recipe steps

Cook lobster tails by boiling or steaming, let them cool and set aside.

In a salad bowl, stir in the mayonnaise, lemon juice, celery, chives, and salt to taste.

Chop up the lobster meat into 1 ½ inch pieces and fold it into the salad mixture.

Lay the lettuce on a platter and top it off with the lobster salad. Layer the salad with avocado slices, more chives, and lemon juice.
