Avocado Salsa

Makes 2 cups

Claimed as the world’s most perfect food, the Avocado is one of nature’s miracles.  Believe it or not nutritionists believe that we could solely survive on only avocado! The avocados health benefits are long and plenty as with its 20 essential nutrients it supplies to the body contributing  to the prevention and control of Alzheimer’s, cancer, heart disease, diabetes and other health conditions.

It is naturally rich in Omega 3 fatty acids making them perfect for a healthy heart, sharp witted brain and excellent eye sight. For a quick snack, a topping for tacos, nachos and all things Mexican or just something to have on the side, this quick avocado salsa is perfect. A little spicy, a lot of flavour and deliciously fresh this will take only minutes to make and will be loved by everyone.

Ingredients

  • ¼ red capsicum
  • 1/3 telegraph cucumber, deseeded
  • ½ Spanish onion
  •  1 avocado Peeled and deseeded
  • Juice of 1 lemon
  • 1 red chili, deseeded and chopped
  • Squirt of tobasco sauce
  • Salt and lots of fresh cracked pepper
  • ¼ Fresh chopped coriander

Recipe Steps

    1. Dice the capsicum, cucumber and the Spanish onion roughly and add these to a food processor, using the pulse button, roughly chop the vegetables until about the size of your little finger nail.  Tip the vegetables into a bowl and add in the diced avocado, lemon juice, chopped chili,  tobacco sauce, salt and pepper, coriander and stir until combined.       The easiest way to open an avocado is to cut it in half, remove the seed with a knife or spoon and then spoon out the flesh or peel off the skin with a knife.

      Avocado is very versatile and can be eaten as a dessert blended with cocoa, honey and banana for a delicious mousse, added to smoothies for a creamy texture, tossed through salads, mashed and spread of breads and crackers.

      It can be stuffed, sliced, diced and blended and most of all makes an ideal nutritious food and easily eaten for babies, toddlers and the aged.  is to cut the avocado in half and sprinkle it with herbal seasoning or maple syrup.
