Packed with flavour, these freezer friendly Carrot Cheesecake Bites are a wonderful lunchbox addition or grab and go snack. This simple recipe comes together in no time in your food processor.
These Low carb / Gluten Free Carrot Cheesecake Bites are a must make. Moist and so flavourful – honest to God I swore I was eating cake. And I am happy to report everyone else loved them as well.
Ingredients
- 1 1/2 cups grated carrot
- 1/3 cup coconut desiccated
- 1/2 cup whole almonds ( optional) you can use any other nut or nut paste)
- 1 tbsp maple syrup
- 4 Medjool dates
- 1 tsp all spice or pumpkin pie spice
- 3 tbsp cream cheese
Recipe Steps
- Place the almonds into your food processor and process until fine. Add in all the other ingredients and pulse until the mixture comes together nicely in a ball. The mixture may be a little soft so allow it to set in the fridge until its firm enough to roll.
- Using a teaspoon, spoon small amounts onto a tray lined with coconut, roll in coconut and set in the fridge.
The Bites will keep for up to a week in the fridge and can be frozen for up to 3 months.
