Halloumi, Corn & Bacon Fritters

Whats more delicious than a fluffly, flavour-packed Halloumi, Fresh corn and Bacon fritter? Nothing!

This is the best and only recipe you will need to make delicious light and fluffy fritters every time. Ideal for any time of the day and great for snacks on the run. This recipe is perfect for you to go ahead and add your own flavours, substitute different flours and also go light or heavy on the cheeses. So have fun with this recipe and play around with different vegetable combinations you have at home to create your own signature fritters.

Ingredients

2 cups plain flour
1 tbsp sugar
4 tsp baking powder
1/4 tsp bicarb soda
1/2 tsp salt and a good pinch of pepper
1 1/2 cups of milk – you can use any milk substitute
1/4 cup melted butter
1 egg
1 cup of fresh or tinned corn kernels – try, grated zucchini, roast pumpkin or sweet potato and any other vegetable
1/2 cup chopped chives, shallots, parsley
1/2 cup chopped halloumi + slices for garnish
1/2 cup grated mozzarella – you can use other cheeses
1 cup chopped bacon or ham + extra for garnish – optional

Recipe Steps

  1. Place the flour, baking powder, bicarb soda, sugar, salt corn kernels, grated cheese, shallots and herbs into a bowl.
  2. Combine the milk with the egg and melted butter in a jug and whisk in the egg.
  3. If you are using the chopped bacon in the fritters, cook off the bacon until just slightly crispy before adding it into the dry ingredients.
  4. Pour all of the milk, egg, and butter into the flour and vegetable mix and slowly fold in the wet until the batter is just combined.
  5. Heat up a non-stick pan over a moderate temperature and add in a little oil or extra butter.
  6. Place spoonfuls of the mix into the heated pan and cook for at least 2-3 minutes on each side until bubbles start to appear on the surface and the cooked side is golden. Before you flip the fritter over is where you add your bacon or an extra slice of halloumi if you want to cook the bacon or halloumi into the fritter.
  7. Finish all of the batter, then serve the fritters with your favouirte accompaniments. The fritters can be frozen for up to 3 months. and are best reheated in the microwave for a couple of seconds or in 180c oven covered with foil for about 10-15 minutes.
