Nectarine and Halloumi Salad

One of my favourite salads with fried halloumi, fresh sweet nectarines and crunchy pears all tossed with peppery rocket. A perfect salad for when stone fruits are in season and you want a meal more than a snack.

Nectarine, Halloumi, Pear and rocket salad

Ingredients

  • 1 pkt of halloumi, sliced into 1 cm slices
  • 2 nectarines, cored and cut into wedges
  • 1 pear, cored and cut into slices
  • handful of walnuts ( optional)
  • ½ red onion, peeled and thinly sliced
  • 2 tablespoons olive oil
  • 2 teaspoon orange marmalade
  • 1 tablespoons white wine vinegar
  • 1 tablespoons water
  • Salt and freshly ground pepper
  • 200g packet of rocket

Recipe Steps

  1. Heat a pan up over moderate temperature and add in a little oil. Fry the halloumi until golden on each side then slice the pieces in half.
  2. Place the sliced nectarines, red onion and rocket into a large salad bowl. Add in the pears and the halloumi and toss over the walnuts. In another small bowl whisk together the olive oil, marmalade, white wine vinegar, water and season with salt and pepper. Pour the dressing over the salad and enjoy.

Tips

·         Capsicum is a fantastic vegetable that marries well with stone fruit in a warm salad, it also brings beautiful bright colour; or you can leave it out and substitute baby peeled carrots or baby fresh corn.

·         For a peppery bite in the salad use, rocket, endive leaves or witlof.
