Watermelon, Tomato and Pomegranate Salad with whipped Feta, Mint, Thyme and Macadamias

But this salad is not just a medley of fruits; it is elevated to new heights with the addition of whipped feta, fragrant mint, aromatic thyme, and the delightful crunch of macadamias.

Prepare to embark on a delightful adventure for your taste buds as we explore the harmonious blend of flavors and textures in this Watermelon, Tomato, and Pomegranate Salad with Whipped Feta, Mint, Thyme, and Macadamias.

Ingredients

Serves 4-5                20 minutes to Prep

1 small watermelon, peeled, sliced into 2 cm slices and cut into triangles

1 small red onion, thinly sliced

1 hand full of fresh mint leaves

5-6 sprigs of thyme

250g cherry tomatoes, sliced

Zest ½ lime

1 pomegranate seeded

70g toasted macadamia nuts, chopped

Whipped Feta

150g feta cheese

2 tbsp yoghurt

Juice of ½ lime

½ tsp minced garlic

Dressing

1 tbsp red wine vinegar

1 tbsp pomegranate molasses

1 tbsp olive oil

salt and pepper to taste

Recipe Steps

  1. Into a large bowl, add in the sliced watermelon, red onion, mint, thyme, sliced tomatoes and lime zest. Toss gently and set aside in the fridge.
  2. Prepare the dressing by combining all the ingredients in a small jar. Place the feta, yoghurt, lime juice and garlic into a food processor or blender and blend until smooth.
  3. To assemble the salad, dollop down the whipped feta adding the melon salad on top. Finish by scattering over the pomegranate seeds and chopped macadamia nuts, drizzle over the dressing.
