Whole Baked Fish with Fresh Tomato, Lemon, Basil and Olive Sauce

This a delicious Sicilian way to Bake Whole Fish with Fresh Tomato, Lemon, Basil and Olive Sauce, bringing together the winning combination of basil and olives. This recipe is perfect for that Easter feast. Or any occasion really.

Baked Fish Ingredients

  • 1 large whole fish, cleaned and scaled

Sauce Ingredients

  •  250 g cherry tomatoes
  • 1 cup olive oil
  • 4 cloves garlic, sliced
  • 1 large red onion, thinly sliced
  • ½ cup pitted black olives
  • Zest and juice of 1 lemon
  • 1 cup fresh   parsley
  •  Salt and pepper

Recipe Steps

Preheat oven to 180c.

Place all the marinating ingredients into a large bowl and combine. Sit in the fridge for a few hours to allow the flavours to marinate.

Place the fish into a baking dish and pour over the tomato and olive salad, season with salt and pepper. Either cover with foil and bake for 40 minutes or leave open and bake for 35 minutes or until the flesh comes away clean from the bones.

Present the gorgeous whole baked fish and warm salad straight from the dish or transfer it all to a serving platter.
