For your next sweet craving, you must try my healthy, low carb zingy Raspberry Berry Bliss Balls. They will definitely keep you from reaching for the fake stuff. I will admit I have a sweet tooth! I remember when I was a little girl, my grandmother gave me my first piece of Licorice. She always had jars of lollies in the house, which I loved.
Needless to say, Licorice has always been my weakness and one of the last standing favourites of my childhood. Nowadays I have definitely been converted to healthier alternatives for my sugary treats. Similarly, I love throwing into the food processor a combination of nuts, seeds, vegan protein powder, fruits, coconut oil, cocoa, a little maple syrup or honey and coconut to create little morsels of natural goodness.
The Raspberry Berry Bliss Balls are easy to make, easy to store, the size of the balls is up to you and the base flavor mix can be used for a number of different other treats like my Raspberry Berry Ripe Bars or you can combine it with my Keto Peanut Chocolate Bombs
Not a fan of peanuts …easy! Leave out the peanut butter and use this luscious berry mix in the chocolate instead. You can also use the base mix for pancakes, baking, and in any of your low-carb ice cream recipes.
This batch of bliss balls uses only 1/2 of the main Berry Mix recipe. What’s leftover can be frozen or kept in the fridge and added to smoothies. I’m sure once you try making these bliss balls, you will come up with your own ideas for different flavours.
In addition, in this recipe and also for my keto chocolate bark I love using local Queensland “Luvaberry” freeze-dried raspberries, strawberries and blueberries which all come in whole fruit and “Dust” – freeze dried berries, blended to a fine dusting powder or flavour booster. The Dust is perfect for cake decorating, blending with raw ingredients for vegan sweets and desserts and its a natural intense flavouring for smoothies. I always make sure I have these in my cupboard to add to my breakfast granolas, eat as snacks and add to salads and dressings.
1. Heat a medium saucepan and melt the butter. Add in the sugar and bring to a low simmer – you don’t want the butter to brown or burn. Stir until the sugar has dissolved, add in the berries. Simmer for 15 minutes until slightly thickened then remove the mix from the heat and add in the Luvaberry Raspberry dust. Set the mix aside to cool.
