In an endeavour to create a sugar free, egg free and dairy free recipe I created this Healthy spelt and coconut slice. A very healthy slice with a lovely fresh fruity flavour. Feel free to substitute the fruits and nuts and I will give you a few more hints through the recipe.
1 ½ cups spelt flour
¾ cups shredded coconut
1 cup dried mixed fruit
¼ cup sunflower seeds
¼ cup pumpkin seeds
¼ cup toasted sesame seeds
¼ tsp of stevia ( optional)
Juice and zest of 1 lemon
½ cup olive oil or coconut oil
1 cup dairy free milk
1 tsp vanilla essence
¾ cup of dried dates cooked down with water until softened
The method is really easy, combine all the dry ingredients
then combine the wet ingredients with your cooked dates or apples and then fold through.
Pour the mixture into the tray lined with baking paper and bake for 45 minutes at 180c
I used a 21 x 31 cm rectangle tray.
Allow the pan to rest for 10 minutes. Cut in to squares and serve.
