Enjoy my One Bowl Orange & Lemon Sponge Brownies using any of your favourite citrus fruits. This is an easy one bowl recipe that you can whip up anytime for any occasion. Best eaten with a dollop of cream, yoghurt or a spoon of ice cream.
Citrus Sponge Brownie
1 cup unsalted butter, softened
1 ½ cups caster sugar
1 tbsp lemon zest
1 tbsp orange zest
4 large eggs
2 tbsp fresh lemon juice
1 ½ cups plain flour
1 tsp baking powder
Citrus Glaze
1 ½ cups icing sugar
2 tbsp fresh lemon juice
1 tbsp orange juice
4 tbsp zest from any citrus (orange, lime, lemon, tangerine or mandarin )
1. Preheat oven to 175c degrees and line a 33 x 23cm baking tray with baking paper.
2. Measure out the flour and stir in the baking powder.
3. Beat together the butter, sugar, orange and lemon juice and zest until light and fluffy.
4. Add in the eggs, one at a time, until combined. With the beaters going, slowly add the flour until just combined. Don’t over mix the batter.
3. Pour batter into the baking pan and bake in the oven for 25 minutes or until a toothpick comes out with moist crumbs. Allow to completely cool before icing with the citrus glaze.
For the Citrus glaze, whisk together the icing sugar, juice and zest until combined. Pour the glaze over the brownie and spread evenly. Allow to set in the fridge before cutting.
