Strawberry Marshmallows

The best and easiest marshmallow recipe on the market. This Strawberry marshmallow is perfect for eating on its own or adding to all sorts of desserts. Once you have the basic recipe you can add in all sorts of flavouring and or colours to make your own flavour combinations.

Ingredients

  • 1 1/2 cups of sugar mixed with 2/3 cup of hot water
  • 2 tbsp powdered gelatin mixed with 2/3 cup of cold water
  • 2 tsp vanilla
  • 4 tbsp LUVABERRY all natural just real fruit  “Strawberry dust”
  • Coconut or equal parts of Icing- sugar and cornflour for dusting

Recipe Steps

  1. Line and grease a  3cm deep, 16.5cm x 26cm (base) slab pan.
  2. Place the sugar and hot water into a saucepan and bring the sugar to a simmer. Simmer for 3 – 4 minutes until clear and slightly syrupy. Remove the sugar from the heat.
  3. Mix the gelatin with the cold water and combine until smooth. Whisk the gelatin into the sugar syrup straight away and then allow the whole mix to cool down to room temp – about 30 minutes.
  4. Place the mix into a bowl and with beaters, beat on high for 10 minutes. You will notice that the mix has almost doubled if not tripled in size and is now white and fluffy…Add in the vanilla and the Luvaberry Strawberry Dust and continue mixing for another 2 minutes.
  5. With a rubber spatular, scrape the marshmallow out of the bowl and into the tray smoothing over the top as best you can. Allow at least an hour for setting, then dipping your knife into corn flour or icing sugar to prevent the marshamllow from sticking, cut into pieces and roll in desiccated coconut or a mixture of icing sugar and cornstarch or cornflour to prevent the marshmallow from sticking.
    Dust with more of the Luvaberry Strawberry Dust and enjoy.
