This season’s cooking classes are all about real food, real flavour and real life.
I’ve designed this program to reflect how we want to cook and eat now — nourishing, affordable, flexible and deeply satisfying. You’ll find classes that focus on protein and fibre, budget-friendly pantry cooking, global flavours, comfort food with a modern touch, and clever ways to use local producer ingredients in everyday meals.
These are hands-on, practical classes where technique matters — but so does enjoyment. We cook food you’ll genuinely make again at home: weeknight meals, generous dishes for sharing, and recipes that work whether you’re cooking for one, a family, or a table full of friends.
Many of the classes are inspired by my personal travels and food tours, my passion for whole foods, local producers and quality ingredients.
Lunch is shared banquet style so you get to taste everything we create in the class.

Welcome to Flavours of Sicily Class.
In this vibrant cooking class celebrating Sicilys bold, rustic cuisine. You’ll create crisp chickpea panelle, vegetable caponata with a twist, Lemon and mozzarella arrancini, stuffed fresh Tuna involtini, and the easiest baked parmesan zucchini. We’ll finish with pasta tossed with roasted tomatoes and pangratatto and to finish, classic ricotta and pistachio cannoli.

Welcome to Plant Base Moroccan Class
You’ll learn to make delicate msemen flatbreads and explore the foundations of Moroccan cooking through chermoula, harissa, and preserved lemons, before creating a vibrant selection of classic dishes — from smoky zaalouk and spiced vegetables to quick tagines, crisp potato fritters, and fragrant buttered couscous with caramelised onions, almonds, herbs, and warm spices.

Welcome to Moroccan Biscuits and Breads Class.
In this hands-on cooking class dedicated to beloved breads and biscuits. You’ll learn to create fragrant, golden breads such as the flakey Spinach, Harissa and Sheeps cheese Msemen, the staple of the Moroccan diet Khobz, and a quick and easy Harcha pan fried bread. For biscuits we will be exploring the techniques, aromas, and rituals that bring Moroccan kitchens to life.

Welcome to A Taste of Puglia Class.
In this cooking class, you’ll learn to make Taralli wine and olive oil biscuits, crispy ricotta, parmesan and anchovy–filled zucchini flowers, and pane polpette using leftover bread with roast tomato sauce. We’ll cook a Puglian classic, orecchiette with broccoli, explore why fava beans are a pantry staple with fava beans and chicory with caramelised onions, and prepare baked sweet peppers alongside indulgent pork bombette with capocollo and cheese.
We’ll finish with Lecce pasticciotti, traditional Italian cream-filled tarts. Buon appetito!

Bring Flavour to Your Food Class
Love flavour and quick and easy ways to make your food sing? Join this class and take home easy recipes and a selection of dressings and flavour bombs to bring bold flavours to your cooking. We’ll explore global flavour builders — from smoky harissa and fragrant chermoula, umami-rich chilli garlic shallot crunch, Dukkah with a twist, Roast Lemon and Citrus zest pesto to name just a few. This class is all about giving you simple flavour combinations you can make to transform any ingredient into something exciting and delicious.

Welcome to Flavours From My Moroccan Food Tours Class
Inspired by the dishes and flavours experienced while travelling through Morocco. I will be cooking with you the best of Moroccan flavours. Vibrant smoky taktouka, chermoula-stuffed sardines, chicken tagine with saffron, olives and lemon and lamb kefta tagine with Rose Harissa, apricots and pistachio salsa. We compliment these with traditional easy Batbout bread and a caramelised pumpkin salad. Mint tea and Moroccan biscuits to finish with orange and pommergranate salad — capturing the warmth, generosity, and depth of Moroccan home cooking.

Welcome to
The Basics of Pasta and Sauces.
Experience the soul-warming art of handmade pasta in this hands-on class. You’ll make two types of dough— egg and flour / semolina and water. We will shape a variety of traditional pastas while learning classic techniques. We’ll pair our pasta with bold sauces such as Puttanesca , the classic Marinara, Carbonara, Herb and Lemon Pesto and the delicious Southern Italian Pasta with Broccoli. Welcome to Easy & Budget Meat-Free Mediterranean.
Looking for fresh ideas for vegetables and sides that are nourishing, affordable, and full of flavour? This class focuses on simple everyday cooking using vegetables, legumes, fresh herbs, and smart pantry staples.
You’ll learn fridge-friendly flavour boosters and how a short time in the kitchen can set you up for the week ahead. We’ll cook cauliflower and cheese hotcakes with cumin and mint yoghurt, chickpea and spinach falafel with garlic tahini, sweet potato coconut curry, smoky Moroccan eggplant salad, easy vegetable tagine, homemade dough for pide or pizza, Korean gochujang roast pumpkin tray bake, and spicy Asian zucchini and green onion salad, finishing with apple and lemon verbena baklava.

Welcome to Beginners Moroccan Flavours
Welcome to Flavours from My Moroccan Food Tours, a cooking class inspired by the dishes and flavours of Morocco. We’ll prepare Essaouira spiced seafood pastries, zaalouk (spiced eggplant and tomato salad), and fried sardines stuffed with chermoula, a Moroccan street-food classic. You’ll also cook a traditional chicken tagine with onions, olives, and lemon, alongside simple vegetable dishes, and finish with almond briouat—crisp pastries with almonds and honey.
Join me as we explore the flavours of Moroccan cooking together.

Welcome to Easy Gnocchi Cooking Class
You’ll learn to make classic potato gnocchi, baked Roman gnocchi, pumpkin gnocchi and delicate ricotta gnocchi, along with a selection of versatile sauces including fresh herb pesto, braised zucchini with peas, mint and verjuice, and traditional tomato and basil. Welcome to Classic Sicilian Antipasto
If you’ve visited Sicily or have always wanted to go, this cooking class celebrates everything that makes Sicilian food so loved.
We’ll start with Spinach and Mozzarella Arancini, followed by Eggplant fritters and crisp Panelle Chickpea Fritters. We will prepare the classic Sfincioni a classic street food focaccia. Enjoy vegetable sides such as Roast Peppers with mozzarella and Basil, Sicilian Fried Pumpkin with cinnamon and garlic and a delicious one pot fried cauliflower – ideal for any occasion. We make a modern take on olive tapenade using figs and a delicious whipped ricotta with pistachio and honey as well as the popular pickled vegetable Giardiniera. This class is all about authentic Sicilian antipasti you can recreate at home, whether you’re reliving a trip or planning one. Buon appetito!

As a result of our love of cooking shows, cooking classes are now the perfect way for companies and private groups to engage in a fun, exciting, hands on activity. Hands-on Cooking Classes are perfect for specialty event nights, team building and corporate client nights. In addition, facilitated cooking classes are an easy way to celebrate diversity in the workplace.
With a range of class plans and structures, I can personally create a cooking class to suit your theme, group dynamic or specialty requested cuisine. What better way to build team morale, say thank you, mingle with clients, or just relax and have fun cooking with friends.
A little chopping, stirring, sautéing, grilling, lots of tasting, a few drinks, and then sitting down to a magnificent banquet of dishes prepared by you and your peers, its an experience which can be enjoy by young and old alike.

About Cooking Classes
Classes are suitable for all levels with specialised classes suitable for Beginners and Basic just starting out Cooks.
Believing that balance is the key to health and happiness, classes include fresh pasta, pizza, menus which celebrate my Sicilian Heritage and menus inspired from my food tours to Puglia, Morocco and Spain. Classes will also include ways to reduce food waste, fermenting, household preserving, pantry staples with a focus on sustainable cooking.
All my classes are hands-on teaching you real life cooking skills, tips and food tricks that will change the way you see, think and work with food. My hands-on cooking classes are designed to give you the confidence to be able to “throw ” together flavours, ingredients and meals bringing nutrition and variety to yourself and your family.
Classes are limited to maximum of 8-10 guests giving each participant a fun, entertaining, informative, and interactive cookery class. Classes are suited to anyone from the complete novice to the true foodie. All my classes below are listed as Vegan / Vegetarian / Gluten Free.
Recipes for each class will be emailed out after the class.
I use all domestic appliances and equipement so you feel comfortable and relaxed to be able to re-create the recipes at home. My classes are focused on delicious, creative, healthy food drawing on my professional experiences and my vast range of food knowledge from my European and World travels.
With the past epidemic, environmental outcomes, public awareness and market trends, basic cooking techniques and home vegetable gardens are providing a small-scale approach to the sustainable use of natural resources, leading towards self-sufficiency, self-regulation, sustainability, and environmental protection.

We could see you have a real passion about avoiding waste, and had so many great tips to share about maximising our produce at home. I plead guilty that I had always discarded all the cauliflower leaves, cut way too far into an onion and hadn’t ever considered using a corn husk when making stock. I am a changed man and was so inspired upon leaving Putia that evening, that I went home and began stir-frying up some remainders in our fridge that would have otherwise ended up as compost. I made enough lunches for the rest of the week.
You’re a natural at presenting but we were amazed how calm your delivery was, with so many things on the go in the kitchen at the same time….and still cracking jokes. A really great evening.

I’m glad I bought Dominique’s recipe book. I made the meatballs tonight for dinner. They were simple to make and absolutely delicious. This weekend, I’m planning on making the hazelnut tart we made during the class. I’m just wondering where I can get some amaretti biscuits from?
The girls have all asked if we could get the recipe for the Sicilian Chickpea panelle, they loved it and saw how easy it could be made.
