ABOUT THE CLASS:
The Moroccan kitchen is not all about heavily spiced dishes, tagines and cous cous! Its full of simple flavoursome recipes, quick vegetable and salad ideas, easy tagines for easy weeknight dinners, and maximum flavour. This is a great class for beginners to immerse yourself in the aromatic cooking of the Moroccan Kitchen. We make some of the basics – Harissa, the versatile Charmoula, and kitchen essential – Preserved Lemons. We make the delicious Zalouk, a smoked eggplant and Tomato Salad, the iconic Chicken , lemon and olive Tagine with caramelised onion and two tasty side dishes suitable for any occasion. I’ll give you an easy recipe that turns your box of cous cous on its head with flavour and we finish with traditioonal mint tea and Almond Briouat pastries.
