- 280g pumpkin, peeled and diced into 2cm cubes
- 3 eggs
- 160g or 2/3 cup Low fat natural yoghurt
- 2 tbsps. honey
- 50g dried dates, chopped
- ¼ tsp. cinnamon
- 1 tsp. minced ginger
- ¼ tsp. mixed spice
- 2 tbsps. 20 g plain flour
Steam the pumpkin for 5 minutes and allow to cool.
In a bowl whisk the eggs with the yoghurt, honey, chopped dates, spices and flour.
Add in the pumpkin and with the bottom of the whisk slightly smash the pumpkin so that it blends with the egg and yoghurt.
Pour the mixture into 6 125ml moulds and steam for 20 minutes until just firm to touch. You may need to do this in batches.
Allow the puddings to cool slightly before serving.
