Need a little inspiration when it come s to Vegetables and sides? And do you want to cook nourishing food that’s easy, affordable and full of flavour? Our Easy & Budget Mediterranean Cooking Class focuses on simple, everyday meals built around vegetables, legumes, fresh herbs and pantry staples. Ill take you through some basics flavour bombs to have in your fridge, and teach you how a few hours in the kitchen can set you up for a weeks worth of food. Together we cook a flavour-packed menu including great lunch box / snack or starters like cauliflower and cheese hotcakes with cumin and mint yoghurt, Italian antipasto brown rice fritters and easy chickpea and spinach falafel with garlic tahini sauce. For our sides/mains we throw together a one pot Sweet Potato coconut curry and Moroccan smokey eggplant salad. To make use of some of our recipes Ill teach you a simple dough recipe to make pide, pizze or calzone oven baked. We also share Spicy Asian Zucchini and Green onion salad and Greek Style Baked Ratatouille – Proof that budget cooking can still be generous and full of flavour.
